Jeffrey Babcock

Through extensive travels across Europe and formal culinary training, Jeff developed a deep fascination with one of the world’s most storied and near-mystical foods: cheese. With an academic background in religion, myth, and ritual, he was naturally drawn to the rich history, tradition, and lore surrounding cheese—an ancient craft elevated through time into both art and sustenance.

Jeff began his career behind the cheese counter, where his passion quickly took root and grew. He soon found his place within the expansive world of specialty cheese at European Imports in Chicago, where he immersed himself in the breadth and depth of global cheese culture.

Joining the American Cheese Society over twenty years ago opened the door to a vibrant community of like-minded professionals and deepened his connection to the industry. His continued travels have taken him to more than eighty dairies, where he has met dedicated artisans and remarkable individuals whose work sustains and advances the craft of cheesemaking.

Following Sysco’s acquisition of European Imports fourteen years ago, Jeff expanded his reach—connecting chefs and foodservice professionals across the country with both historic and emerging cheeses. His work has helped bring exceptional products not only to major urban centers but also back to the rural communities where cheesemaking traditions originate.

A member of the Guilde Internationale des Fromagers, Jeff has also served as a judge for both the American Cheese Society Competition and the World Cheese Awards.
